Ingredients

  • 3 cups uncooked spiral pasta
  • 1 pound ground beef
  • 1/2 small onion, diced
  • 1 cup heavy whipping cream
  • 1 cup 2% milk
  • 1 envelope onion soup mix
  • 1/4 cup shredded Gruyere cheese
  • 1/4 cup shredded Swiss cheese
  • Optional: Chopped fresh thyme and green onions

Directions

  1. Cook pasta according to package directions; drain. In a large skillet, cook beef and onion over medium-high heat, breaking up beef into crumbles, until meat is no longer pink and onions are tender, 5-7 minutes; drain and return to the pan. Stir in cream, milk and soup mix; bring to a boil. Reduce heat; simmer uncovered until mixture thickens, 8-10 minutes.
  2. Remove from heat and stir in cheeses and cooked pasta. If desired, serve with thyme and green onions.

  • 1 loaf (1 pound) frozen pizza dough, thawed
  • 5 tablespoons olive oil, divided
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup fig preserves
  • 10 ounces crumbled goat cheese (about 2 cups)
  • 1/4 cup balsamic glaze
  • 1 cup chopped walnuts, toasted

Directions

  1. Preheat oven to 450°. Press dough into a greased 15x10x1-in. baking pan. Drizzle with 3 tablespoons oil. Sprinkle with salt and pepper. Bake until for 10 minutes.
  2. Spread preserves over crust. Sprinkle with goat cheese. Drizzle with balsamic glaze and remaining 2 tablespoons olive oil. Bake until cheese is slightly melted and crust is golden brown, 7-10 minutes longer. Sprinkle with nuts. Serve warm.

  • STRAWBERRY FILLING:
  • 1/2 cup freeze-dried strawberries
  • 1/4 cup unsalted butter, softened
  • 1 cup confectioners' sugar
  • 1 tablespoon heavy whipping cream
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • GANACHE:
  • 1/2 cup heavy whipping cream
  • 1/2 cup semisweet chocolate chips
  • 3 fresh strawberries, optional

Directions

  1. Preheat oven to 350°. Line 12 muffin cups with paper liners. Sift flour, sugar, cocoa, baking soda and salt together twice; place in a large bowl.
  2. In a small bowl, whisk buttermilk, egg, oil and vanilla until smooth. Add to flour mixture. Drizzle in hot coffee, beating until smooth.
  3. Fill prepared cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 18-20 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely.
  4. Place freeze-dried strawberries in a food processor; process until a fine powder. In a large bowl, beat butter until creamy. Beat in confectioners’ sugar, cream, vanilla, salt and strawberry powder until smooth. Cut a small hole in the corner of a pastry bag; insert a very small tip. Fill with strawberry filling. Push the tip through the bottom of paper liner to fill each cupcake.
  5. Place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; let stand 2 minutes. Stir with a whisk until smooth. Dip tops of cupcakes in ganache, let stand until set. If desired, garnish tops with slices of fresh strawberries.

  • 2 cups shredded cheddar cheese or shredded Mexican cheese blend
  • 1 can (4 ounces) chopped green chiles, drained
  • 1 cup salsa
  • 1/2 cup chopped green onions
  • Pickled jalapeno slices, optional
  • Sour cream and guacamole

Directions

  1. Preheat oven to 350°. Place melted butter and chips in separate shallow bowls. Dip wings in butter, then in chips, patting to help coating adhere. Place in greased rimmed baking pans. Bake, uncovered, until juices run clear, 30-40 minutes.
  2. Layer half the wings in a greased 13x9-in. baking dish. Top with 1 cup shredded cheddar cheese, green chiles and 1/2 cup salsa. Repeat layers with remaining wings, shredded cheese, salsa, green onions and if desired, jalapeno slices.
  3. Bake until cheese is melted, 10-12 minutes. Serve with toppings of your choice.

Directions

  1. Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan.
  2. In a small bowl, mix cracker crumbs, sugar, and cinnamon; stir in butter. Press onto bottom of prepared pan.
  3. In a microwave, melt chocolate; stir until smooth. In a large bowl, beat cream cheese, sugar, flour and nutmeg until smooth. Beat in brandy, Cacao, and melted chips. Add eggs; beat on low speed just until blended. Pour over crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan.

  5. For ganache, in a microwave, melt white baking whips and cream; stir until smooth. Cool slightly, stirring occasionally. Remove rim from cheesecake pan. Pour ganache over cheesecake, allowing ganache to drip down the sides. If desired, serve with whipped cream.

Refrigerate 2 hours or until firm enough to roll.
  2. Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. circle-shaped cookie cutter. Place 1 in. apart on parchment-lined baking sheets. Bake until edges begin to brown, 7-8 minutes. Remove from pans to wire racks to cool completely.

  • 1 cup dry bread crumbs

  1. Preheat oven to 425°. In a large bowl, combine ground beef, pork, eggs, bread crumbs, onion, 1 teaspoon of salt, 1/2 teaspoon pepper and cooked rice; mix lightly but thoroughly. Shape into 30 1-1/2-in. balls.
  2. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until browned, 15-20 minutes. Remove from oven and reduce temperature to 350°. Remove pan drippings into an oven-safe skillet.
  3. Add butter to skillet and melt over medium-high heat. Stir in flour and remaining salt and pepper until blended; cook and stir until lightly browned, 1-2 minutes (do not burn). Gradually whisk in broth. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add cranberry sauce, stirring until well combined. Add meatballs to skillet; stir to coat in sauce.
  4. Bake until cooked through, about 45 minutes, stirring halfway.

  • 2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
  • Minced fresh parsley

Directions

  1. Place the first 5 ingredients in a 5- or 6-qt. slow cooker.
  2. Toss beef with flour, salt and pepper. In a large skillet, heat oil over medium-high heat. Brown beef in batches. Transfer beef to slow cooker with a slotted spoon. Reduce heat to medium. To same skillet, add tomato paste and garlic. Cook and stir 1 minute.
  3. Add beer to skillet, stirring to loosen browned bits from pan. Transfer to slow cooker. Stir in broth and thyme.
  4. Cook, covered, on low until beef and vegetables are tender, 7-8 hours. Garnish with parsley.

  1. Trim Brussels sprouts stems; using a paring knife, cut an "X" in the bottom of each. Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, cook and stir bacon until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in cooker.
  2. Add garlic to drippings; cook and stir for 1 minute. Add sprouts; cook and stir 1 minute longer. Stir in broth, salt and pepper. Press cancel.
  3. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. Transfer to a serving bowl; toss with lemon juice and reserved bacon. Top with cranberries.

  2. In a separate bowl, combine pork, veal, beef, egg, onion, parsley, salt, paprika, garlic powder and pepper. Add soaked bread crumbs, mix lightly but thoroughly.
  3. With wet hands, shape meat mixture into 1-1/2-in. balls. In a large skillet, heat butter over medium heat. Brown meatballs in batches. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until cooked through, 30-35 minutes.
  4. In a small bowl, dissolve bouillon in boiling water. In a large saucepan, combine soup, bouillon mix and soy sauce until heated through. Remove from heat and stir in sour cream; serve with meatballs. If desired, serve meatballs and sauce over mashed potatoes, pasta or rice, and top with additional parsley.

Ingredients

  • 2-1/2 pounds ground beef
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon pepper
  • 1 can (4 ounces) chopped green chiles
  • 1 garlic clove, minced
  • 1 can (46 ounces) tomato juice
  • 4 cups V8 juice
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 cans (16 ounces each) kidney beans, rinsed and drained
  • 2 cans (16 ounces each) pink beans or pinto beans, rinsed and drained
  • Optional: Sour cream, cubed avocado, shredded cheddar cheese and sliced jalapeno pepper

Directions

  1. In a large Dutch oven, cook beef over medium heat until no longer pink; drain. Continue to cook until beef is browned, 4-5 minutes longer. Add onion and celery; cook until tender. Stir in chili powder, cumin and pepper; cook 1 minute. Add green chiles and garlic; cook 1 minute longer.
  2. Stir in juices and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Add beans and simmer 20 minutes longer or until thickened to desired consistency. If desired, serve with sour cream, avocado, cheese and jalapenos.
  3. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.
Pink Beans
This recipe was tested with Goya Pink Beans (Habichuelas Rosadas). Pinto beans may be substituted if pink beans are difficult to find.

  • 2 teaspoons butterscotch flavoring syrup

Directions

  1. In a large bowl, stir together hot water and marshmallow creme until smooth. Freeze until cool, 20-25 minutes. Stir in whipped topping mix, confectioners' sugar and salt; blend with a hand mixer until foamy, 30-60 seconds. Stir in butterscotch syrup and extracts.
  2. Pour soda into two 16-oz. mugs; stir in butterscotch syrup. Top with Butterbeer Foam. Serve immediately.

  3. Remove from oven; let stand 10 minutes. Run a knife around sides of ramekins; invert onto dessert plates. Serve immediately. If desired, garnish with additional raspberries.

  • 16 ounces white baking chocolate, chopped, divided
  • 4 ounces cream cheese, softened
  • 1/4 cup confectioners' sugar
  • 1 teaspoon rum extract
  • 1/2 teaspoon ground nutmeg

Directions

  1. In a microwave, melt 8 oz. chocolate; stir until smooth. In a large bowl, beat cream cheese, confectioners' sugar, extract and nutmeg until blended and smooth. Beat in melted chocolate. Cover and refrigerate until firm enough to shape, about 4 hours.
  2. Shape chocolate mixture into 1-in. balls; place on a waxed paper-lined baking sheet. Refrigerate until firm enough to dip, about 1 hour.
  3. In a microwave, melt remaining chocolate, stir until smooth. Dip truffles in chocolate; allow excess to drip off. Place back on waxed paper-lined baking sheet. Sprinkle with additional nutmeg. Refrigerate until set. Store between layers of waxed paper in an airtight container in the refrigerator.

  1. Preheat oven to 400°. In a small bowl, combine cream cheese, spinach, chipotle peppers, adobo sauce, green onions and cinnamon.
  2. On a lightly floured surface, unfold puff pastry. Spread cream cheese mixture to within 1/2 in. of edges. Layer 6 slices of roast chicken over mixture. Roll up jelly-roll style; pinch ends to seal. Cut crosswise into eighteen 1/2-inch slices. Place cut side down on greased baking sheets. Repeat with second sheet of puff pastry.
  3. Bake 20-25 minutes or until pastry is puffed and golden brown.
  4. In a small saucepan, melt raspberry jam. Drizzle jam over warm pastries. Serve immediately.

  1. In a large bowl, dissolve yeast in warm milk. Add bread flour, butter, sugar, egg and salt. Beat on medium speed for 3 minutes. Stir in enough all-purpose flour to form a firm dough.
  2. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  3. In a pie plate, combine sugar and pie spice. Pour melted butter into another pie plate. Punch dough down. Turn onto a lightly floured surface. Shape into a loaf. Using a sharp knife, make 4 very deep slits straight across bread dough (without cutting all the way through the loaf). Roll dough in butter, massaging butter onto all surfaces until dough is thoroughly coated. Roll dough in sugar mixture, firmly pressing mixture onto dough. Place dough in a parchment-lined 9x5-in. loaf pan. Cover and let rise in a warm place until doubled, about 30 minutes. Meanwhile, preheat oven to 350°.
  4. Bake until golden brown, 30-40 minutes. (Cover loosely with foil if top browns too quickly.) Cool 10 minutes before removing from pan to a wire rack. Serve warm.

  1. Preheat oven to 350°. If desired, tie pork with kitchen twine. Rub pork with 1 tablespoon olive oil; sprinkle with salt and pepper. In a large skillet over medium-high heat, sear pork until browned on all sides, 7-9 minutes. Place in a large roasting pan; top pork with garlic slices. Cover and place in oven. Meanwhile, combine squash, apples, dried cranberries, brown sugar, remaining olive oil and if desired minced fresh rosemary and thyme; toss to coat.
  2. Remove pork from oven after 30 minutes; add squash mixture to roasting pan. Return pork to oven; roast, uncovered for 40-50 minutes or until a thermometer reads 145°. Let pork stand 10 minutes before slicing. Drizzle pork with pan juices after slicing. Serve with roasted squash mixture. If desired, top with additional fresh rosemary and thyme.

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 12 bacon strips, cooked and crumbled

  • 1 cup heavy whipping cream

Directions

  2. Transfer to a greased 13x9-in. baking dish. Sprinkle with bacon and 1 cup cheddar cheese. In a large bowl, whisk together eggs, tomato paste, heavy cream, tomato paste, Worcestershire sauce, salt, and pepper until well combined. Pour over beef mixture. Place in center of an 18x12-in. piece of heavy-duty foil; dot with butter. Fold foil around pork and crimp edges to seal; place on a baking sheet. Bake until a thermometer reads 145°, 25-30 minutes. Remove roast from oven; let stand 10 minutes before slicing. Reserve pan drippings in foil.
  2. While pork is resting, in the same skillet, add wine, stirring to loosen browned bits from pan. Stir in cream, shallot and barbecue sauce. In a small bowl, whisk flour and broth until smooth; stir into pan. Add reserved pan drippings. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add spinach and sun-dried tomatoes; heat through. Remove from heat. Serve with sliced pork.

  • 1 boneless beef chuck roast (about 2 pounds), cut into 1-inch pieces

  • 3 celery ribs, chopped
  • 1 large onion, chopped

  • 6 cups beef stock
  • 4 large Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 1/2 pound fresh mushrooms, sliced
  • 3/4 cup farro, rinsed
  • 3 bay leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Directions

  1. Sprinkle beef with salt and pepper. Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add 1 tablespoon oil. When oil is hot, brown beef in batches. Set aside.
  2. Add remaining 1 tablespoon oil, carrots, celery and onion to pressure cooker; cook and stir until vegetables are crisp-tender, 5-7 minutes.
  3. Add garlic; cook 1 minute longer. Add tomato paste; cook and stir until fragrant, about 1 minute. Add wine, stirring to loosen browned bits.
  4. Return beef to pressure cooker. Stir in stock, potatoes, mushrooms, farro, bay leaves, garlic powder and thyme. Press cancel.
