Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas

Directions

  1. In a large bowl, cream shortening and sugar. Beat in eggs. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Pour into a greased 8x4-in. loaf pan.
  2. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let stand for 10 minutes before removing from pan; cool on a wire rack.
